Old MacDonald's Potato Box Recipes 

Grilled minted new potatoes

Ingredients

2 lbs (1 kg) small new potatoes, about 18 potatoes
1 tbsp (15 mL) olive oil
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
6 (12-inch/30-cm) wooden skewers
1/4 cup (50 mL) chopped fresh mint

Directions

1. Do not peel potatoes. Place in a large saucepan, then cover with water. Cover and bring to a boil over high heat. Then reduce heat to medium, partially cover and simmer until barely fork-tender, from 8 to 10 minutes. Drain well, then place in a large bowl. Pour in oil and sprinkle with salt and pepper. Stir until potatoes are well coated.

2. When cool enough to handle, thread 3 potatoes on each skewer. Grill right away or leave at room temperature 4 to 5 hours. When ready, oil grill. Preheat barbecue to medium-high. Grill, turning often, until potatoes are lightly charred and hot, from 8 to 10 minutes. Place on a platter. Sprinkle with mint. Great with grilled chicken or burgers.
