Potato Pancakes I

Ingredients

1 onion, minced
3 scallion, chopped, use some of the green parts for colour
2 cloves garlic
2 large egg, beaten
3 tbsp all purpose flour
1 tsp salt
pepper, to taste
3 large Yukon Gold or russet potato, peeled, grated
2 tbsp fresh parsley, chopped
1 tbsp peanut oil or 1 tbsp clarified butter

Directions

1.Combine the onion, garlic, scallions and eggs in a large bowl. In a separate bowl stir together the flour, salt and pepper. Beat it into the egg mixture. Press the shredded potatoes between some kitchen paper to dry them. Stir the potatoes into the egg and flour mixture. Add the parsley and mix well.
2.Heat the oil in a large skillet over a medium high heat and drop the potato mixture by the spoonful onto the hot skillet, flattening it with a wide spatula to form ΒΌ-inch thick patty shapes. Cook until well-browned and crisp, 5 to 6 minutes per side.
