Old MacDonald's Potato Box Recipes 

Vichyssoise with Apple

Ingredients

4 apples, peeled and seeded
4 potatoes, peeled
3 leeks, white part only, washed well
2 celery stalks
1 litre light chicken broth
500 ml milk
Salt, pepper and chives

Directions

Place the apples, potatoes, celery and leeks into a pot with the chicken broth; simmer for 30 minutes;
remove the pot from the heat and let cook for ten minutes;
add the cold milk; liquefy the mixture in a blender;
season to taste; add the snipped chives; chill in the refrigerator;
serve very cold; garnish with a few more chives.
