Roasted Shallot & Garlic Dip

Ingredients

·1 qt sour cream
·2 cups finely sliced shallots
·2 cups fresh garlic cloves –sliced
·Oil
·Salt & Pepper

Directions

1.Sauté shallots and garlic till brown and crispy. (Almost fried, but not deep-fried). Drain well. Blend shallots and garlic with sour cream. Season to taste with salt and pepper. Chill. (Note: slice potatoes lengthwise to create longer chips and leave the skin on.)
