Harlequins
Ingredients
5 medium potatoes, washed
450g plain flour
2 teaspoons baking powder
Salt and pepper
600ml milk or waterVegetable colouring
350g potatoes, finely grated
125g chicken seasoning
Oil for frying
Directions
1.Cut each potato lengthways into wedges.
2.Par cook by boiling for 5 minutes.
3.Sift the flour, baking powder and chicken seasoning into a large bowl.
4.Slowly whisk in the liquid, beat well.
5.Add colouring and grated potato, mix well.
6.Dip each wedge into the potato batter and deep fry for 2-3 minutes until crispy.
