Grilled Red And White Potatoes With Pecans

Ingredients

1 lb. small new red potato
1 lb. small new white potato
3 tbsp olive oil
8 oz smoked bacon
2 cup green beans
1 cup pecan
1 red pepper, cut into strips
1/2 cup thinly sliced shallot
1/2 cup chopped green onion
3 tbsp chopped parsley

Parmesan Dressing
4 tsp white wine vinegar
4 tbsp olive oil
2/3 cup fresh grated parmesan cheese

Directions

1.Prepare Parmesan Dressing.
2.Cook potatoes for 10 minutes in salted water. Drain and cut into halves.
3.Toss potatoes with olive oil and salt and pepper. Grill in foil packet for 3- 5 minutes.
4.Cook green beans in water for 2 minutes. Cool and drain.
5.Cut bacon into chunks and cook in skillet until brown and crispy. Drain. Place all ingredients in bowl and toss with Parmesan dressing.
6.Sprinkle with parsley.
Parmesan Dressing
1.Whisk olive oil, wine vinegar and cheese until blended.
