Curried Potato Salad

Ingredients

750g potatoes, scrubbed, and cut into quarters
1 medium burpless cucumber, seeded and diced
1 tblspn tikka curry paste
¾ cup whole egg mayonnaise (low-fat can be used)
½ cup Greek-style natural yoghurt
1 tblspn lemon juice
2 tblspn fresh coriander, chopped
Extra coriander to garnish

Directions

1.Boil potatoes in a saucepan for 8 minutes
2.In a large bowl combine tikka paste, mayonnaise, yoghurt, lemon juice and fresh coriander. Mix well.
3.Add potatoes and cucumber to dressing and fold together gently.
4.Serve garnished with fresh coriander.
