Potato Salad with Anchovy Dressing

Ingredients

500g small potatoes, cooked and halved
500g stringless green beans, cut into lengths and blanched
1 small red onion, sliced thinly
Fresh herbs to garnish: rosemary, chives, parsley
Dressing:60g chopped anchovy fillets
1 teaspoon wholegrain mustard
2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons natural yoghurt
Freshly ground black pepper

Directions

1.Put potatoes, beans and onions into a salad bowl.
2.Combine dressing ingredients thoroughly and pour over the salad. Toss well.
3.Garnish with fresh herbs.
