Old MacDonald's Potato Box Recipes 

Grilled Vegetable and Potato Salad

Ingredients

3 medium potatoes, par-boiled, sliced
1 red onion, sliced
3 small eggplant, sliced
1 red capsicum, seeded, cut into squares
3 small zucchini, sliced
Juice and grated rind of 1 lemon
3 tblspn olive oil
2 tblspn fresh herbs Freshly ground black pepper

Directions

1.Preheat a grill or barbeque plate and spray with a little oil to prevent sticking. Place vegetables on grill.
2.Combine 1 tspn of lemon rind, oil, herbs and pepper.
3.Brush over vegetables while cooking.
4.Cook until slightly charred.
5.Pile onto a salad plate and drizzle with any remaining marinade mixed with lemon juice.
6.Sprinkle with lemon rind and serve warm.
