Delicious Potato Foccacia
Ingredients
2 1/2 cups (400g) plain flour sifted
1 tspn dry yeast
¼ tespn sugar
250ml warm water
1/4 cup olives, roughly chopped
1/2 cup red onion, sliced and fried
2 tblspn olive oil (plus extra for brushing)
2 potatoes, boiled and very thinly sliced
Sea salt (optional)
Directions
1.Combine flour, yeast, sugar, oil and water. Knead by hand or with the hook attachment of a mixer until dough springs back when pressed.
2.Place the dough into a lightly greased bowl. Cover and allow to rise until doubled in size.
3.Knead for a further 10 minutes, then knead in olives and onions. Shape the dough into a ball and flatten on an oiled baking tray until about 30cm in diameter. Brush with a little oil. Allow to rise for a further 20 minutes.
4.Press potato slices over the top of the foccacia. Brush with remaining oil and bake in a 200°C oven for 20-25 minutes.
