Potato, Cheese and Chive Frittata
Ingredients
3 medium potatoes, thickly sliced and boiled
6 eggs, lightly beaten
2 tblspn chopped chives or parsley
1 medium red onion, thinly sliced
2 cloves garlic, crushed
1 cup low-fat grated cheddar cheese
Salt and black pepper
1 tspn butter or oil
Extra chives to garnish
Directions
1.In a bowl, combine eggs, cheese, chives and salt and pepper to taste.
2.In a heavy pan, fry onion and garlic in butter or oil until softened. Add sliced potatoes and toss gently.
3.Pour egg mixture over potatoes and cook on very low heat until slightly set. Place pan under the grill for 2-3 minutes until the top is golden brown.
4.Serve garnished with extra chopped chives.
