Dill-mustard Potato Salad
Ingredients
1kg potatoes
2 litres chicken stock or water
½ cup light sour cream
½ cup good quality, low-fat mayonnaise
3 tblspn of Dijon-style mustard
2 tblspn finely chopped fresh dill or 2 tspn dried dill
Freshly ground black pepper
3 celery stalks, thinly sliced
1 red onion, thinly sliced
½ bunch chives, snipped or chopped
Directions
1.Cook the potatoes in stock until just tender then drain and rinse in cold water.
2.Slice the potatoes into 10mm thick slices and arrange in a salad bowl with the celery and onion.
3.Combine the light sour cream, mayonnaise, mustard and dill and fold through gently before garnishing with chives and black pepper.
