Potato Fish Cakes

Ingredients

475g tin pink salmon, drained, skin and bones removed
500g potatoes, peeled and quartered
1 tablespoon butter or olive oil
1 onion, finely chopped
65g freshly chopped herbs: basil, parsley, tarragon
60g plain flour
2 eggs, beaten
500g breadcrumbs
Salt and pepper

Directions

1.Boil the potatoes gently until just cooked.
2.Heat the butter or oil in a small pan and gently fry the onions until softened.
3.Mash the potatoes and mix with the flaked salmon, onion and herbs. Season to taste and divide the mixture into 8 portions.
4.Mould the mixture into small patties, dust each with flour, dip into the egg mixture and coat with breadcrumbs. Place in the refrigerator for 30 minutes.
5.Deep or shallow-fry each fish cake and serve with lemon mayonnaise.
