Potato and Lamb Rissoles

Ingredients

2 medium potatoes, peeled, cooked, mashed, cooled.
500g lamb minced (good quality grade)
2 tblspn fresh mint, chopped
1/2 white onion, finely diced
Black pepper to taste
2 eggs
Oil for frying

Directions

1.Place the potato, minced lamb, fresh herbs, onion, eggs and black pepper together in a bowl and mix well.
2.Form the mixture into round cakes. Can be snack size or meal size.
3.Fry for 5-7 minutes each side so cooked through and browned well. Serve with mustard or tomato sauce.
