Potato Lasagne
Ingredients
1kg potatoes (thinly sliced)
1tbs chopped parsley
1tbs chopped oregano
1tbs chopped thyme
100g sliced and pitted black Kalamata olives
1 Cacciatore sausage sliced lengthways or rindless bacon
1 small onion sliced thinly
1 jar Italian, pizza or pasta tomato sauce
Salt and pepper
Directions
1.Slice the potatoes and place in a large mixing bowl, adding herbs, olives, onion and a little salt and pepper. Mix well.
2.Oil a ceramic baking dish then place a thin layer of potato mixture on the bottom.
3.Spread Italian sauce on top and lay strips of sausage over the sauce.
4.Repeat process until all mixture is used.
5.Cover tray with tinfoil.
6.Cook for 1.25 hours at 180°C. Serve with green salad or vegetables.
