Potato & Spinach Parcels
Ingredients
1 tblspn pine nuts
250g spinach
250g fetta cheese, crumbled
60g cheddar cheese, grated
600g (4 medium) potatoes, cooked and cubed
1/4 cup grated parmesan cheese
freshly ground pepper
pinch ground nutmeg
12 sheets filo pastry
1/4 cup yoghurt
1 tblspn vegetable oil
Directions
1.Place pine nuts in saucepan. Stir over low heat until golden brown. Remove from heat immediately.
2.Chop pine nuts roughly.
3.In a bowl combine spinach, pine nuts, fetta and cheddar cheeses, potatoes, parmesan cheese, pepper and nutmeg.
4.Brush a sheet of filo pastry lightly with yoghurt, top with another sheet of filo, brush with yoghurt. Fold in half crossways.
5.Place one portion of the spinach and potato mixture in the centre and gently roll up.
6.Place on greased oven tray, brush top with oil.
7.Repeat with remaining pastry and spinach and potato mixture.
8.Bake in a preheated 200C oven for 20 minutes or until golden brown.
