My Mom's Potato Salad
Ingredients
15 large red potatoes
4 eggs, hard-boiled
2 bunches green onions -- thinly sliced
3 sour pickles -- chopped
1 small jar pimentos -- chopped
1 large fresh jalapeno,or more -- chopped
1 cup mayonnaise or more as needed
2 tablespoons white vinegar
salt and pepper

Directions
1. Boil the potatoes until soft but still firm. Allow to cool ( I always cover
with cool water and allow to cool that way) After cool peel and dice into a lar ge bowl. Add the chopped eggs, green onions, pickles, pimentos, and jalapeno if desired. I love them so I add at least 2! Mix in the mayonnaise as needed to bind and mix together. Salt and pepper and mix in. Smooth in the bowl and sprinkle with paprika. Cool in the refrigerator until ready to serve.
