Roasted Potato And Bean Salad With Basil And Walnuts
Ingredients
1 1/2 lb. new red potato
1/4 cup olive oil
1/3 cup walnuts, pieces
3/4 lb. green beans, trimmed, and, cut into 1.5 inch pieces
3 green onion, sliced
1/2 cup fresh packed basil
1/8 cup walnut oil
1/8 cup white wine vinegar
2 cloves garlic, chopped
Directions
1.Scrub potatoes and cut into wedges.
2.Place in foil pan and drizzle half of olive oil over potatoes and season with salt and pepper.
3.Place on a medium grill for 30- 35 minutes and toss occasionally. Let cool.
4.Place walnuts on a baking sheet and toast for 5-7 minutes.
5.Cook beans for 3-4 minutes until crisp. Drain and rinse with cold water.
6.Add to potatoes along with onions.
7.Puree basil with walnut oil and remaining olive oil, vinegar and garlic.
8.Season with salt and pepper and pour over potato mixture.
9.Toss well to coat. Sprinkle with walnuts.
