Portuguese Fried New Potatoes
Ingredients
3 Tbsp. butter
3 Tbsp. olive oil (no substitution)
1/2 Tsp. salt
fresh ground pepper
1 1/2 Lb. new potatoes -- peeled
and sliced in 1/4-inch rounds
1 Tbsp. finely chopped parsley
Directions
In heavy skillet, melt butter in oil over moderate heat.
When foam subsides, add potatoes. Turning frequently, cook 15 minutes or until tender and golden brown. Season with salt and few grindings of pepper, then transfer to heated platter and
serve at once sprinkled with parsley.
