Tomato Potato Tortillas
Ingredients
2 medium potato
4 roma tomato
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp minced garlic
1 tbsp chopped fresh basil
dash salt and pepper
4 flour tortilla
Directions
1.In a small bowl whisk together oil, vinegar, garlic, basil, salt and pepper.
2.Peel potatoes and cut into paper-thin slices. Slice tomatoes into ΒΌ-inch slices. Place potato and tomato rounds in shallow container and drizzle with marinade. Cover and refrigerate for 1 hour.
3.Place a single layer of tomato slices on tortilla and arrange a single layer of potato slices on top of tomatoes. Drizzle any remaining marinate on top, and sprinkle liberally with salt and pepper.
4.Preheat grill to medium, lightly oil rack, and grill tortillas on top rack over medium heat with grill cover down for 10-15 minutes, or until tortilla has grill marks and potatoes are tender.
