Buttermilk-Chive Mashed Potatoes
Ingredients
8 potatoes, about 4 lbs (2 kg)
1/4 cup (50 mL) butter
1 cup (250 mL) warmed buttermilk
1/2 tsp (2 mL) each salt and pepper
2 tbsp (30 mL) finely chopped chives
Topping:
1 tsp (5 mL) butter, melted
1 tsp (5 mL) snipped chives
Directions
Peel and chop potatoes into even-sized pieces. Cook potatoes, partially covered, for 20 minutes in a large pot of boiling salted water; drain well, shaking gently and return pan to heat for 30 seconds or until bottom of pan is dry. Mash with hand-held masher or potato ricer. Beat in butter, warmed buttermilk, salt and pepper. Stir in chives. Taste and adjust seasonings if necessary.
