Mashed Potatoes Plus
Ingredients
750 mL (3 cups) mashed Mashing potatoes
500 mL (2 cups) chopped leeks, white part only
250 mL (1 cup) grated old cheddar cheese
salt and pepper, to taste
15 mL (1 tbsp) fine dry bread crumbs
5 mL (1 tsp) butter
2 slices crisp bacon, crumbled
Directions
·Simmer leeks in a small amount of water until soft.
·Mash using a potato masher, or puree with a food processor.
·Stir leeks and grated cheese into mashed potatoes. Spoon into a lightly-greased casserole dish.
·Sprinkle crumbs over potato mixture, dot with butter, and top with crumbled bacon bits.
·Heat at 180'C (350'F) for approximately 30 minutes or until heated through.
