Potato Kale Bake
Ingredients
4 Baking potatoes
375 mL (1½ cups)green kale, steamed until tender, and mashed or pureed
250 mL (1 cup) chopped onion
5 mL (1 tsp) canola oil
50 mL (1/4 cup) hot milk
125 mL (½ cup) grated cheddar cheese
Directions
·Scrub potatoes, pierce with a fork, and bake at 200'C (400'F) for approximately 1 hour, until tender. Cool enough to handle, cut a thin slice from each potato, and spoon out the flesh, leaving the skin intact.
·Mash the flesh, and stir in the pureed kale.
·Cook chopped onion in canola oil over medium heat until soft and translucent. Stir onion and hot milk into potato mixture.
·Spoon kale/mashed potato mixture back into potato skins, and top with grated cheese.
·Reheat in 200'C (400'F) oven for approximately 15 minutes, or as required.
