Old MacDonald's Potato Box Recipes 

Potato & Ham Scallop

Ingredients

1 litre (4 cups) peeled sliced Boiling Potatoes (approximately 4 potatoes)
25 mL (2 tbsp) all purpose flour
2 mL (½ tsp) salt
dash ground black pepper
25 mL (2 tbsp) butter
250 g (½ lb) lean ham
100 g (about 4 oz) old cheddar
1 medium cooking onion
500 mL (2 cups) 2% milk

Directions

·Stir flour, salt and pepper together in a small dish.
·Cut butter into 1 cm( ½”) cubes.
·Cut ham into 2.5 cm (1") cubes, and grate cheddar.
·Slice onion, and prepare potatoes.
·In a lightly-greased 22 cm (8") square baking dish, layer ½ sliced potatoes, followed by all of the onion slices and butter. Sprinkle on flour mixture. Then layer ham, about 3/4 of the grated cheese, and remaining potatoes, and pour milk over all. Sprinkle the remaining cheese on top.
·Cover and bake at 180'C (350'F) for 45 minutes. Remove cover, and continue baking until potatoes are tender, about 1 hour. Remove from oven, and allow to sit for 10 minutes before serving.
