Rosemary-Smoked New Potatoes
Ingredients
3 lb. red skinned new potato
3 large bunches fresh rosemary
1/4 cup olive oil
salt
pepper
Directions
1.Parboil the potatoes for 5-6 minutes. Drain.
2.Soak 2 bunches of rosemary in water for 30 minutes. Let the other rosemary branch soak in the olive oil for 1 hour.
3.Skewer the potatoes and brush with the rosemary oil.
4.Grill the potatoes for 3-4 minutes then drain the 2 rosemary bunches and place on the coals. Turn the potatoes and grill until browned.
