Potato Gratin
Ingredients
Butter to grease dish
1 1/4 lb Potatoes -- cook w/skin, peel,-slice thin
Salt and pepper
Creole seasoning
1 lg Leek -- cut into rings
1 sm Red bell pepper -- dice
TOPPING
7 oz Half and half
2 Eggs
2 tb Parsley
Salt and pepper
Nutmeg
4 oz Gruyere cheese -- grate
Directions
Place half of the potato slices in a buttered dish and
sprinkle with salt and pepper and/or Creole seasoning.
Sprinkle leeks over the potato layer, cover with
remaining potato slices and season with salt, pepper
and/or Creole seasoning. Scatted red pepper over the
top. Beat milk, eggs, parsley and a dash of salt,
pepper and nutmeg together and pour over potatoes.
Bake in preheated 425~ oven for 15 to 20 minutes.
Sprinkle cheese over the top and brown in oven for an
additional 8 to 10 minutes
