Mustard Potato Salad

Ingredients

6 large potatoes peeled and cubed
1 medium sweet onion chopped fine
2 large stalks of celery sliced
1 large Heinz sour dill pickle chopped
2 tablespoons fresh dill (optional) chopped fine
1 tablespoon fresh chervil (optional) chopped fine
1/2 cup mayonnaise
2 tablespoons mustard
2 tablespoons pickle juice
1 teaspoon salt
1/4 teaspoon black pepper

Directions

Boil the cubed potatoes. Meanwhile chop the onion, celery, pickles, and herbs. (If fresh herbs are not available you can substitute 1-1/2 teaspoon of dried dill and a teaspoon of chervil.) In a small bowl mix the mayo, mustard, pickle juice, salt and pepper. Add to chopped ingredients in large bowl. When potatoes are good and soft, but not crumbling apart, drain and add to the sauce and chopped ingredients in the large bowl. Toss gently to coat. (The fact that the potatoes are soft and hot helps them absorb the dressing.) Chill, and serve garnished with fresh dill or parsley.
