Crème Fraîche

Ingredients

1 cup heavy (double ) cream
1 cup sour cream

Directions

1.Combine the creams in a bowl and whisk lightly
2.Cover the bowl loosely with plactic wrap and leave in a warm place (room temperature is fine) overnight for the culture to develop. At the end of the maturing time the cream mixture will be thick and subtly tart.
3.Transfer the bowl to the refrigerator and chill for at least 4 hours.
4.Crème fraîche will keep in the refrigerator for 2-3 weeks, and will continue to develop its delicate tartness as it matures.
