Potato Pancakes
Ingredients
4 large russet potatoes
1/2 cup finely chopped onion
3 eggs, beaten
1/4 cup flour
1 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil for frying
Directions
Peel potatoes and grate either by hand or using a food processor fitted with a grating blade. Squeeze grated potato dry by hand and place in a large mixing bowl. Add remaining ingredients and mix well.
Heat two or three tablespoons of oil in a large, heavy skillet on medium-high heat. Scoop 1/4 cup of the batter for each pancake and drop into hot pan.
Press down on batter to slightly flatten with a spatula or the bottom of the measuring cup, if it is metal. When pancakes are very golden brown - about three minutes per side, place on a large serving plate and keep warm in oven while making the rest of the batch. Serve immediately with toppings of choice. Makes about a dozen pancakes.
