Buckwheat and Onion Potatoes

Ingredients

1 cup olive oil
1/2 cup finely chopped rosemary
2 tbsp finely chopped garlic
salt and pepper
2 lb. medium red potato, scrubbed
1 pkg buckwheat tortilla
1 red onion

Directions

Buckwheat and Onion Potatoes
1.Make 3 to 4 crosswise slits in each potato, being careful not to cut all the way through.
2.Cut tortillas and onion into pieces slightly smaller than the slits in the potato.
3.Insert tortilla and onion pieces, alternating, into the slits in potato. Drizzle potatoes with dressing.
4.Prepare grill. Preheat to medium. Grill potatoes on top rack at medium heat for about 30 minutes, or until fork-tender.
