Old MacDonald's Potato Box Recipes 

Potato Korma

Ingredients

1 tbsp vegetable oil
¼ red onion, chopped
1 garlic clove, crushed
1 potato, cubed
1 tsp coriander seeds, toasted
1 tsp cumin seeds, toasted
1 tsp turmeric
1 tsp paprika
150ml/¼ pint hot water
110g/4oz Greek yogurt

Directions

1. Preheat a large saucepan.
2. Heat the oil in the saucepan.
3. Add the onion and garlic and sauté for 3 minutes.
4. Add the spices and stir well.
5. Pour in the water and bring to the boil. Add the potatoes and leave the korma to simmer for 10 minutes.
6. Add the yogurt and stir well. Leave korma on heat for a further 2 minutes, then remove from the heat.
7. Spoon the korma into a dish and serve.
