Twice-Baked Potatoes With Swiss Cheese And Chives
Ingredients
4 large baking potato, scrubbed, and, patted dry
2 tsp vegetable oil
3/4 cup milk
1/2 cup heavy cream
1 cup shredded Swiss cheese
2 tbsp unsalted butter, softened
2 tbsp minced chives
1/2 tsp salt
1/2 tsp pepper
Directions
Twice-Baked Potatoes With Swiss Cheese And Chives
1. Rub the potatoes with vegetable oil and bake until very tender, about 40 minutes.
2. Let the potatoes cool slightly, then slice off tops. Scoop out the potato leaving ¼" thickness of skin. Mash the potato.
3. Stir in milk, cream, ½ cup of Swiss cheese and the butter and whip until creamy. Stir in the chives and salt and pepper.
4. Set the potatoes on aluminum and top with remaining cheese. Bake for another 10 minutes
