Island Potato Donuts
Ingredients
2 cups wellcooked mashed potatoes
1/2 cup margarine
1 cup milk
3 eggs
21/2 cups white sugar
1 tsp. vanilla
6 cups flour
2 tsp. cinnamon
1 tsp. nutmeg
4 tsp. baking powder
11/2 tsp. salt
Directions
Bring the milk to a boil, add potatoes and margarine. Let cool. Beat eggs. Add sugar and beat well. Add the 1st mixture and beat. Gradually add flour and other ingredients. Pat dough out to halfinch thickness on lightly floured board and cut with donut cutter. Cook in hot fat.
