Duchess Potatoes
Ingredients
3 cups hot riced potato
2 tbsp butter
1 tsp salt
few grains paprika
3 egg yolks, beaton
1 egg yolk, beaten with 1 tbsp cold water
Directions
Preheat oven to 350F. Combine potato, butter, salt, paprika and egg yolks. Use a pastry bag to form rosettes or pyramids in a baking dish. Brush with egg yolk-water mixture. Bake for 15 minutes.
