1 lb. Yukon Gold potato, peeled, and, quartered
1/2 lb. unsalted butter
3/4 cup buttermilk
1 1/4 cup fresh chives, cleaned and chopped fine

1. Place the potatoes in a large pot and fill with cold water.
2. Bring to a boil over high heat and cook until the potatoes are very soft or for approximately 25 to 35 minutes.
3. Drain the potatoes in a colander and let sit for 5 minutes.
4. Put the butter and buttermilk in a small sauté pan and melt over medium heat. Do not bring to a boil.
5. Place the potatoes, butter and buttermilk in a 5-quart mixing bowl.
6. Add the chives, and mix with a hand whisk or a potato masher for approximately 2 minutes.
7. Then, blend on high speed for an additional 2 minutes.
8. Remove from the bowl and place into a serving bowl.
