New Potatoes with Caviar
Ingredients
450g/1lb small Jersey royals, or other very small waxy potatoes
110ml/4fl oz sour cream, unstirred
2 tbsp chives, chopped
55-110g/2-4oz avruga mock caviar
black pepper
watercress, to garnish
Directions
1. Scrub the potatoes and drop into boiling, salted water and cook until just tender. Drain and split in half and divide the potatoes between 4 serving plates.
2. Allow to cool to room temperature, spoon a dollop of cream mixed with the chives and some salt and pepper into each potato and divide the caviar equally between the potatoes.
3. Season with freshly ground black pepper. Garnish with watercress or stand in a bed of rock salt and serve immediately.
