Creamy Potato Soup

Ingredients

1 pound (3 medium) potatoes, peeled, thinly sliced
1 1/2 cups low-sodium chicken broth
1 1/2 cups milk
1 tablespoon butter or margarine
1/2 cup thinly sliced green onions
3 tablespoons chopped parsley
Salt and white pepper, to taste

Directions

In large saucepan, over medium high heat, bring potatoes and broth to a boil. Reduce heat to medium; cover and cook 12 to 15 minutes or until potatoes are tender when pierced with a fork. Cool slightly and pour 1/2 of potato mixture into blender container with half of the milk; blend until smooth. Pour into another saucepan. Repeat with remaining potato mixture and milk. Stir in butter, onions and parsley. Season with salt and pepper to taste. Heat, stirring, over medium heat.
