Old MacDonald's Potato Box Recipes 

Saffron and Thyme Mash

Ingredients

2-3 potatoes, peeled and chopped
handful of fresh mint, chopped
4 tbsp double cream
55g/2oz unsalted butter
handful of fresh thyme, de-stalked and finely chopped
Pinch of saffron strands
course sea salt

Directions

1. Boil the potatoes in a pan with the mint until they are soft (about 30 minutes). Remove from the heat, drain and remove the mint.2. Mash the potatoes while they are still hot, slowly adding the cream and the butter. Add the thyme when the potatoes have been mashed thoroughly.3. Mix in the saffron.4. Mix everything well and serve piping hot.
