Black Olive and Garlic Mashed Potato
Ingredients
300g/10½oz red potatoes
6 cloves garlic, peeled
6 black olives, stoned and chopped
2 tbsp olive oil
25g/1oz butter
1 tbsp truffle oil
l30ml/1fl oz milk and 30ml/1fl oz single cream, mixed and warmed
salt and freshly ground pepper
Directions
1. Peel the potatoes, wash well and place in a saucepan with just enough water to cover. Add the garlic cloves and 1 tbsp olive oil. Add the salt. Bring to the boil and simmer for 15 minutes.2. Drain the potatoes, remove the garlic and set aside, add the butter and crush the potatoes whilst still warm.3. Warm the truffle oil with the garlic cloves and add to the potatoes.4. Add the olives, milk, cream, salt and pepper.5. Put the potatoes back onto a very low heat and allow to absorb half the milk/cream. Remove from the heat, mash thoroughly, check seasoning and keep warm.
