Monk's Potatoes
Ingredients
450g/1lb potatoes
1 large red onion, chopped
4 tbsp olive oil
3 sprigs rosemary
salt and black pepper
Directions
1. Chop the potatoes into chunks, wash and mix with the chopped red onion.
2. Put this mixture into an ovenproof dish, pour over the olive oil, season and sprinkle with rosemary. Cook at 200C/400F/Gas6 for 40 minutes.
3. Serve.
