Passover Miniature Potato Knishes

Ingredients

675g/1lb7oz mashed potatoes (about 2 very large potatoes)
2 eggs, slightly beaten
1 large onion, diced
2 tbsp margarine
1 tsp salt (or to taste)
pinch black pepper
43g/1½oz cup matzah meal
1 egg yolk beaten with 1 tbsp/15ml/½fl oz water

Directions

1. Preheat oven to 200C/400F/Gas6.
2. Sauté diced onion until golden brown.
3. In medium bowl, combine mashed potatoes, sautéed onion, eggs, margarine, salt, pepper, and matzah meal.
4. Form mixture into small balls about the size of a walnut. Brush with diluted egg yolk.
5. Place on a well-greased baking sheet and bake for 20 minutes or until well browned.
