Crispy Choux Potatoes

Ingredients

3 medium potatoes
100ml/3¾fl oz cold water
55g/2oz butter
55g/2oz plain flour
salt
1 large egg, beaten

Directions

1. Peel, boil and mash the potatoes.
2. Put the water and butter in a pan, bring to the boil and melt the butter.
3. Remove from the heat and stir in the flour, beat until smooth.
4. Gradually beat in the egg and add the salt.
5. Weigh the choux mixture and add an equal weight of mashed potato, mix well.
6. Use a teaspoon to shape small balls of the mixture.
7. Deep fry in groundnut or vegetable oil for a few minutes until puffy and golden.
8. Sprinkle with sea salt and serve with mayonnaise and a little horseradish sauce or wholegrain mustard.
