Old MacDonald's Potato Box Recipes 

Crushed Cornish Potatoes

Ingredients

400g/14oz new potatoes
2 L/3½pt water to cover
2 heads of garlic, cut in half
2 large bay leaves
20 sprigs of thyme
1 tsp chicken bouillon
40g/1½oz salt
100g/3½ unsalted butter
salt and pepper

Directions

1. Scrub and wash the new potatoes and place into a saucepan. 2. Cover with the water and then add the rest of the ingredients, except the butter and final seasoning.3. Bring to the boil and reduce to a simmer. 4. Cook for approximately 20 minutes. 5. Once cooked, drain and using a fork or a potato masher, crush the potatoes lightly, add the butter and season with salt and pepper.
