Worcestershire Fyrtled Savoury Pudding

Ingredients

waxy new potatoes - cut into smallish chunks
handful of mint
broad beans
broad bean tops
peas
lovage, chopped
1 red onion, chopped very finely
eggs (allow one and a half per person), beaten with a little seasoning
1 buffalo mozzarella, sliced
butter

Directions

1. Boil the new potatoes with fresh mint.
2. Fry the onion in a knob of butter in a generous sized frying pan until soft but not too caramelized.
3. Add the potatoes, peas and beans to the frying pan.
4. Keep turning in the buttery juice for a minute or two. Meanwhile roughly chop the bean tops and add to the pan, at this stage add seasoning of salt and pepper.
5. Add another knob of butter, stir in the lovage, and tip in the beaten eggs and help them settle into the frying pan. Cover the top with slices of mozzarella, then cover with a lid and wait a couple of minutes for the eggs to set.
