Pommes Anna II
Ingredients
1 large potato, peeled and very thinly sliced on a mandolin
30g/1¼oz melted butter
salt and pepper
Directions
1. Preheat the oven to 220C/425F/Gas 7.2. Brush a medium heavy ovenproof pan with the melted butter. Arrange a neat layer of overlapping potato slices on the bottom of the pan. Brush with butter and season well with salt and pepper. 3. Place the pan on direct medium heat for 2-3 minutes to brown the bottom. Flip over and cook the other side. 4. Slide out of the pan and keep warm whilst you repeat the process with another layer of potato to make the second portion. Eat at once
