Potato and Pepper Gratin
Ingredients
8 medium or 6 large potatoes, peeled and sliced
4 large peppers, cubed
1 large onion, sliced
handful green olives, cut in half
110g/4oz cheddar, grated
75g/3oz camembert, cut into slices
110ml/4oz single cream
fresh breadcrumbs
fresh dill, chopped
salt and freshly milled black pepper
butter or chicken fat
1 tbsp olive oil
Directions
1. Boil the sliced potatoes in slightly salty water for about 10 minutes. 2. Melt the butter or chicken fat in the frying pan, add the cubed peppers and cook for about 5 minutes, stirring occasionally. Then remove from the pan.3. Add the onions to the same pan, add more fat if necessary and cook for about 3-4 minutes.4. Oil a medium baking dish and layer half the sliced potatoes on the bottom. Season if desired, but be careful as cheeses and olives are quite salty.5. Cover the potato layer with half the peppers, then half the onions. Scatter half the olives and then ¾ grated cheddar over the onions and finish by pouring over half the cream.6. Keep alternating the layers with remaining ingredients. Finish with a layer of camembert slices, then a sprinkling of breadcrumbs mixed with fresh chopped dill.7. Cover and chill for at least 30 minutes (or overnight if you are preparing ahead).8. Preheat the oven at 200C/400F/Gas 6 and cook the dish for 25 minutes. Let it settle for 5 minutes before serving.
