Potato and Ratatouille Stacks

Ingredients

two-thirds potato, cut into thin discs
handful broccoli florets
one third Ratatouille Mix


Ratatouille Mix:

1 tomato, chopped
two thirds courgette, chopped
½ red onion, chopped
2 garlic cloves, peeled and chopped
2 tbsp olive oil
85g/3oz stilton
salt and freshly ground black pepper
Ratatouille mix

Directions

Method 1. Preheat a griddle pan.2. Griddle the potato discs and broccoli florets.3. Place a round pastry cutter in the middle of a plate. Place the potato disc in the bottom of the round pastry cutter and top with ratatouille. Continue to layer the potato and ratatouille up.4. Gently remove the pastry cutter.5. Place the griddled broccoli around the potato stack

Method For Ratatouille

1. In a medium saucepan heat the olive oil.
2. Fry the onion and garlic for 2-3 minutes until softened but not browned.
3. Stir in the tomatoes and courgettes and cook for 10 minutes.
4. Crumble the stilton into the ratatouille. Season if necessary.
