Potato Corn Bake

Ingredients

8 potatoes, cubed
1 small onion, finely chopped
3 cups frozen sweet corn
6-8 green chilies, finely chopped
butter
250ml/8fl oz single cream
1 cup grated mild cheddar cheese
salt, to taste

Directions

1. Boil the potatoes until they soften (make sure not to boil them for too long or they will turn to mash). Drain.
2. Fry the onion in a little butter.
3. Mix the potatoes, onions, chilies, sweet corn and half the grated cheese together and add salt to taste.
4. Put the mixture into a casserole dish, pour the single cream over, add little knobs of butter and the remaining grated cheese.
5. Bake at 180C/350F/Gas 4 for 20-25 minutes.
