Deep-Fried Curried Potato
Ingredients
2 potatoes, peeled and cut into 1.25cm/½in thick rounds
50g/2oz plain flour
2 tsp curry powder
salt and freshly ground black pepper
vegetable oil, for deep frying
For the batter:100g/4oz plain flour
water
salt and freshly ground black pepper
Directions
1. Heat the deep-fat fryer to 190C/375F or fill a large pan one-third with vegetable oil. To test if oil is at the correct temperature, drop a small cube of bread in the oil. If it sizzles and turns golden the oil is ready to use. (CAUTION: hot oil is very dangerous. Do not leave unattended.) 2. In a medium bowl mix the flour and curry powder. Season.3. Toss the potato in the flour mixture.4. To make the batter, put the flour in a bowl and season.5. Whisk in enough water to make a thick batter consistency.6. Coat the potato in batter and deep-fry until cooked, crisp and golden.7. Remove with a slotted spatula and drain on kitchen paper.8. Serve.
