Old MacDonald's Potato Box Recipes 

Bombay Style Potatoes

Ingredients

300g/10½oz baby salad new potatoes, halved
2 tbsp vegetable oil
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp chili powder
½ tsp ground cinnamon
½ tsp ground turmeric
1 shallot, peeled and finely chopped
2 garlic cloves, peeled and chopped finely
2 tbsp white wine

Directions

1. In a medium sauté pan dry-fry the cumin and coriander seeds. Remove and set aside.2. Heat the oil in the same pan.3. Fry the potatoes for 3-4 minutes.4. Stir in the roasted cumin and coriander seeds, chili, cinnamon and turmeric for 30 seconds.5. Add the shallot, garlic and wine.6. Cover and gently steam roast for 3-4 minutes or until the potatoes are cooked through.
